If you're talking of the organisation i think you are, (i think they're called the Balance or something like that) they don't exist for another 200 or so years, not until the destruction of the Sith.
I like the idea, but i think it would be fine for you to be an off-the-wall Jedi, perhaps one who was only madea Knight so that they would leave the order alone (it needs all the Knights it can get because of the war [third i checked] with the Sith.)

Well at this point in the war things are getting pretty dire, so they'd most likely be looking for anyone force sensitive enough, you'd probably end up as a minor Sith minion, or in one of the 3 Jedi corps, but i doubt there would be many force sensitives who escaped their notice.

I've been considering a few character types. The main one is a Force-user (Jedi or not, I don't have a strong prefrence) who does not use a lightsaber. A character who feels that Lightsabers are too dangerous, and that bare hands are much easier to control. The main problem I have been having with this concept, however, is that I fear Lightsaber-wielding characters, with their AP weapons, ability to deflect blaster bolts and so on would overshadow my "weaker" character. I'm not entirely sure how to deal with that.
How about some fan-made actions? I've been considering Nerve Punch from the Spidey Guide, and maybe some others, like Iron Will.

Well both Yoda and Darth Vader have shown there is such an ability within the force repetoire as the ability to stop energy attacks with your hands. Possibly something along those lines combined with Nerve Punch.
One question I have though. What is the relationship between armor and force powers?
I have noticed that Jedi don't wear armour but Sith (at least in KotOR) do. What gives?
There is a suggestion that armour affects the force users ability to use the force. Darth Vader however seemed to be doing fine wearing armour.
Thoughts anyone?

Actually Jedi did wear armour throughout the Sith wars, especially before the advent of portable lightsaber technology. It doesn't affect force usage, but the Jedi tend not to wear it because it goes against their philosophy of peace. If you go into a situation wearing armour it says that you are wanting a war, and that is obviously going to make diplomacy harder. Plus for most people just knowing that you have a weapon as potentially dangerous as a lightsaber can diffuse a situation (e.g. Jedi Knight-Jedi Academy or Mace Windu when surrounded by about twenty pirates).
But Kaimontfendo if you don't want to use a lightsaber we could do some re-jigging of Ninja (like i did for lightsaber combat) perhaps you could take the Absorb energy option for your mastery of the force if you want to counteract the effect of blasters. But frankly you shouldn't be worried about an AP weapon like a lightsaber, it's a hefty amount of stones and not that many people wear armour in the Star Wars universe, you get troopers in armies wearing Blast Armour (which is probably at most +2) and later on Storm/Clone Troopers (which are obviously out of this game's remit) wearing heavier armour (maybe +3 or +4). Plu there are lots of Jedi who hardly ever draw their lightsaber, I'm reminded of one from the Clone Wars Graphic Novels- she didn't even have a lightsaber, instead she had a mastery of the force that few could match- in fact she could manipulate minds into not fighting, and at one point she held back the explosion of an entire droid factory. (Or in game terms, she probably didn't even buy Lightsaber combat so saved herself 4-15 white stones and used those to boost her other abilities instead.)

Also we really need to think of a name, as we'll be starting (what is hopefully) Mission #1 (of many), and i'm dry as to a possible name. All we'er waiting for now is Kaimontfendo, Janus and Browwiw's characters (and i already have half of Browwiw's and i think Janus nearly ahs his done, plus Kaimontfendo must be close-ish.)

As oer the Avengers guide (which is where lightsaber costs etc. were done from) Armour costs +3 levels, just like toughness.

Just for comparison's sake, here's the armor that I will be using. It's not Mandalorian Iron (just plasteel and underweave) but it'll work for my purposes.
Combat Armor, Defense (+3) <6w> - No x2 Dmg.
Armor made out of actual Mandalorian Iron would probably look something like this:
Mandalorian Iron Armor, Defense (+5) <15w> - Nulls Armor Penetration - No x2 Dmg.
6w vs. 15w ...I think I'll just earn the Mandalorian Iron in gameplay.

And while I'm thinking about it, how do I price gauntlet flamethrowers? And a retractable gauntlet vibroblade? And grenades? I'm gonna need stun, concussion, and fragmentation.
I'll just use the stats for the rocket boots in the back of the man book for the jet pack.

Alright Boba; Well firstly don't forget wealth for some things- especially the vibroblade- that's most likely a +2 weapon like a good quality knife, so around 100 credits. Frag and concussion grenades are probably basically the same thing, and all grenades could be bought (200 credits each) but i guess for all three if we said 6 white for 6 of each a mission so 18 in total. Flamethrower would be MN+1(base)-2(For reduction in range to 2)+3(For Area)+2(For Double Damge)-1(For collateral) or MN+3.
I think that covers it, all of this stuff is in the Avengers's Guide so you could find it all there if you wanted to.
