... if there's a good, well-done Star Wars conversion out there? I did a web search and found some very nice discussion on posting boards of how to handle the Dark Side and so on, but what I'm looking for is more like a nice little package I can read and digest without having to dive through several pages of posts and pick out the bits I like/need.

Not that I'm aware of, though that doesn't mean much as I don't pay much attention to FATE out of its focused incarnations. It's an interesting question.

Think there was some discussion about it on RPg.net but it was Saga based. If I recall, someone here (the name eludes me for the moment) said... "The Saga System failed for a reason. It sucked. Most of what I personally disliked about SAGA was based in the system (though their understanding of the Star Wars Universe was wildly skewed as well), but all I'm really looking for is a solid framework.
FATE has a nice balance of story-driven and crunchy mechanics, but it needs to be really well focused to... well, not suck.

Not sucking is a solid foundation for... well, most things I have to hold my hands up and admit whilst I own a few fate based games (Icons?) I havn't played them yet. My understanding is they have 'fate dice' which can be simulated by roll 1d6-1d6 to generate a number from -5 to +5, then add attribute/skill/power? Or am I miles off (and therefore going to have to go read the Fate rules to know what I'm on about)?

That's one way to do it. The other way is 4d6, being treated as 4d3 [with 1-2 being negative, 3-4 being neutral, and 5-6 being positive] which more exactly approximates their dice and the original range of -4 to +4

This would be awesome WK. Oh, I own a handful of Fate Games and they are all awesome. Especially Spirit of the Century and Dresden Files.
Anyway, the easiest thing to do is just to go out and buy some fate dice. Saves you a lot of math.
Ya, I do not know of a Star Wars conversion out there yet.
