Question... Do we have to pay full price stones wise for Blasters? They seem to have so many advantages that even buying a bunch of weak ones would take a lot of stones?

No, no. As long as they're regular ones as statted, you can pay for them in Credits through the Wealth modifier. If you put 1w in Wealth (MN 3), you should have enough starting Credits for pretty much all the weapons you want. However, you might want to pay for a Mandalorian Armor with stones, as Mandalorian Iron is one of the few materials to be able to block lightsabers, and as such would qualify for a No AP 3 armor.
EDIT: Remember that some weapons would also require to pay the license for, as you guys have likely acquired them via the Empire. Likely, meaning not mandatory, but not having the license for a restricted weapon could cause trouble later.

I see... Here's my ideas for weapons I would want this character to have.
Twin blaster pistols or rifles if I can duel wield them.
a heavy blaster
a shoulder-mounted grenade launcher.
and a slugthrower minigun.
keep in mind I don't want to carry all these at once, but rather just the blaster guns and whatever weapon would work best on each mission.

That would work fine. And yes, you can dual wield Blaster Rifles, they count as medium-size weapons. Even human-size people often use Blaster Rifles one-handed, and being a Hutt, they would be even smaller to you. You can hold them easily in one hand each.
